I made this yummy salsa and poured it over grilled chicken breasts! It was the yummiest!! It could also be yummy as a side salad!! ~Enjoy!!
Southwestern Corn and Black Bean Salad
2 cans black beans (rinsed and drained)
2 cups corn kernels (I used frozen)
2 cups chopped tomato's
1 cup finely chopped sweet onion
1 cup chopped red bell pepper
1 cup chopped green bell pepper
Dressing:
1/2 cup fresh lime juice (about 3 limes)
1 tablespoon chili powder
3 Tablespoons olive oil
2 teaspoons salt
1 1/2 teaspoons ground cumin
2 teaspoons honey
3 garlic cloves, minced
1/3 cup chopped fresh cilantro
To Prepare salad
Mix all together
Cover and refrigerate at least 30 minutes
