Summer of Blending - 5 Ingredient Tomato Soup #Vitamix


Tomato Soup is the perfect summer dinner along with a nice fresh slice of homemade bread. Many tomato soup recipes have a long list of ingredients. We have created a simple five ingredient tomato soup that can be made in less than five minutes using the Vitamix.


Since I spend so much time in the kitchen preparing meals for my allergic child, my children take an active part in cooking with me. It is such a wonderful bonding experience and helps to teach them many skills. The Vitamix is a very easy machine to use and operate that even my children can use it. Ella helped me make this yummy fresh and easy tomato soup in the Vitamix.





Ingredients:

  • 8-10 Roma Tomatoes
  • 6 Basil leaves
  • 3 Cloves of Garlic
  • 3 Tbl. Olive Oil
  • 1 Sweet Onion
Directions:
  1. Mix all of the ingredients well in your Vitamix machine until smooth and creamy
  2. Warm on the stove for 15 minutes
  3. Serve warm with a fresh slice of bread

    3. If you don't heat it on the stove, the raw garlic will be VERY strong and the consistency will be watery.

  9. I made this exactly as the recipe states; it was very "tomatoey" (similar to gazpacho's strong, raw tomato flavor). The addition of reduced balsamic vinegar provided depth in color and taste. If I make it again I will certainly add the reduced balsamic near the end. Thanks!
