Summer of Blending - Summer Quinoa Recipe #Vitamix

I love to cook Quinoa for my family. Quinoa is a grain that has ancient origins, dating back over five thousand years to the vast and might Inca civilization of South America. Quinoa was important to the Inca culture, they referred to it as the Mother Grain. We call it the Supergrain of the future because of it's unique qualities. Quinoa is wheat free and gluten free. It is easy to prepare our Quinoa summer recipe using the Vitamix machine.

Vitamix Quinoa Summer Recipe

  • 1 cup Quinoa
  • 3 Tbl. lemon
  • 1 1/2 Tbl. Olive Oil
  • 1/2 tea. Salt
  • 1 1/2 tea. Honey
  • 1/4 tea. pepper
  • 1 Green bell pepper
  • 1 Red bell pepper
  • 2-3 Green onions
  • 2-3 Cups chopped tomatoes

First cook 1 cup of Quinoa with 2 cups of water. Bring to a boil and then simmer for 15 minutes until firm.

Mix the bell pepper and green onion in the Vitamix Machine

Dice the tomatoes

Mix all the remaining ingredients and chill for 20 minutes before serving
