Recipe: Greek Pasta Salad

My children love pasta and it is one of my favorite ways to sneak vegetables into their meal. I recently made a Greek pasta salad that they just loved and contained a lot of vegetables. The best part about this recipe is that your kids will eat a good amount of vegetables without even realizing it.

Ingredients:

• 1 Package of fuseli pasta
• 1 Japanese Eggplant (grilled)
• 1 Zucchini (grilled)
• 1 Yellow bell pepper
• 1 Red bell pepper
• 2 Large tomatoes
• 1/2 Jar Kalamata Olives
• 1/2 Cup Olive Oil
• 2 Tbl. Balsamic Vinegar
• 1 Package of Feta Cheese

Directions:

1. Cook and drain the pasta.
2. Grill the eggplant and zucchini

Add the olives, vinegar and olive oil to a blender. Blend until smooth.

Then add peppers, eggplant and zucchini to blender. Pulse until the vegetables are chopped. 

Chop the tomatoes

Add the Feta cheese, tomatoes and vegetable mixture to the noodles. Enjoy!
