Beer Roasted Chicken & Vegetables with Kale Recipe


There is no question that tonight had to be the juiciest chicken ever!! I also purchased an organic chicken - which is worth the double in price!

This dinner only took about 10 minutes to prepare, and then I could go back outside to ride bikes with the kiddos. A healthy dinner does not require a ton of time in the kitchen.

Ingredients:

  • 1 chicken
  • 3 small potatoes
  • 4 carrots
  • 2 tea. of oregano
  • 1/4 tea. of sweet paprika
  • 1 can of beer
  • 3 Tbl. of olive oil
  • Dash of salt

After cleaning the chicken, I covered it with olive oil. You can never use too much olive oil with this recipe.


Then sprinkle the spices all over the chicken.


Add the vegetables to the roasting dish.


Then pour one can of beer over the chicken. (I know - not my first choice in beer either, but it was the only kind I could find)


Roast the chicken at 375 for about 1 1/2 hours. I covered it with foil for the first 1/2 hour of the roasting. 


Serve with a fresh loaf of bread, and some yummy Kale. Enjoy!

  2. Shelby. Yummy kale does not exist. However, that chicken looks great - did it really taste better because it was organic?

    1. With a little olive oil + tons of garlic, it can work! Yes, I was surprised that it did taste better.

  3. Yum! I hear that beer makes a sweet glaze - I saw a recipe recently that used dark beer in brussel sprouts!

    1. Oh yeah!! There are tons of way to use beer as a marinade. It is one of my favorites to use!

  9. Drooool! Nothing is better than a simple recipe. I usually roast chicken similar to your recipe minus the beer. Next time I'm going to add that missing ingredient!
