Ingredients:
- 2 Cups of diced cherry tomatoes
- 3 Tbl. of garlic
- 1 pound of shrimp
- 1 16.5 oz. can of crushed tomatoes
- 1/4 cup of diced kalamata olives
- 1/4 cup of feta cheese
- Dash of salt and pepper
- 1 tea. of Oregano
- 1 tea. of parsley
- 1 pound of angel hair pasta
- 2 Tbl. of olive oil
Directions:
Bring water to a boil, and then cook the pasta according to the package instructions.
In a saucepan, heat the olive oil.
Then add the cherry tomatoes, garlic and shrimp. Cook for approximately 10-15 minutes, or until shrimp is fully cooked.
Add your spices, and crushed tomatoes
Cook for about 5 more minutes, then mix with pasta!
Mix with olives & cheese..
Serve with homemade rolls, and enjoy!

DeleteNo way- I would have never thought of this on my own. Really yummy! I may skip the olives, do you think if I did that it would take away too much of the flavor?
ReplyDeleteI don't think so. My husband does not like olives, and he took them out. He thought it was yummy without them!
