Roasting Vegetables is one of my favorite (and easiest) ways to prepare vegetables. Roasted vegetables helps keep all the nutrients in the vegetable, and gives it a crispy texture that kids love.
- 1 box of rigatoni
- 1 head of broccoli
- 5 slices of bacon
- 1/2 red onion
- 1/2 cup of parmesan cheese
- 2 Tbl. Olive oil
- 2 cloves of garlic
Mix broccoli, onion, garlic and olive oil into a bowl.
Put the vegetables on baking cheese, and sprinkle with 1 Tbl. of Parmesan cheese.
Broil the broccoli mixture and bacon at 350 degrees for 10-15 minutes
Combine all the ingredient with the cooked pasta, top with remaining Parmesan - enjoy!
