Tonight my son had a baseball game, and I was off to the OC Family Green event. I needed to prepare a fast dinner, while getting ready at the same time. Steve's Mom used to make this super easy tuna melt recipe when he was younger. It is important to me that my kids eat a lot of fish, so I decided to give it a try.
I had made eight tuna melts expecting to enjoy one when I got home later in the evening, but they were all gone. (a sign that my family enjoyed them)
- Whole wheat english muffins
- 1 can of tuna
- 1 cup of shredded cheddar cheese
Cut 4 english muffins in half, and place a foiled lined cookie sheet. Evenly top each muffin with tuna.
Sprinkle with cheddar cheese. Then bake at 350 degrees for 15-20 minutes. Serve with a green salad.
