Kale Caprese Lasagna Recipe

Last night I was feeling a little adventurous in the kitchen, and since I am on such a big Kale kick - I created this ultra-yummy recipe. The secret - the Kale (the most nutritious veggie around). My husband has been so sick of me serving him Kale almost every night, and yet he had no clue that it was Kale in the lasagna. How's that for being a sneaky chef?

  • 1 pkg. lasagna noodles
  • 1/2 cup chopped cherry tomatoes
  • 1 bunch of fresh organic kale
  • 1 cup mozzarella cheese
  • 1/4 cup chopped basil
  • dash of olive oil

First line the baking dish with a little olive oil. Then add a splash of red pasta sauce, followed by some hard lasagna noodles.

Then add some fresh (organic - remember Organic is important when purchasing kale) Kale. Add some chopped basil, mozzarella cheese, and some chopped cherry red tomatoes.

Repeat until your dish is full!

Bake at 375 for 25 minutes! Enjoy with some fresh roasted veggies!!

  1. No way will I eat this, I have an aversion to Kale. But I am certain my son would LOVE this, perfect timing, I can make this for him for Easter dinner!

  2. I wish I could like kale, since it's such a superfood and all...but it tastes like chewing on tin foil to me. Can you tell me about another superfood that I might like better? I do want to eat more healthily.

  3. I love the idea of kale in the lasasgna! Right now I hide spinach in thigs occasionally- the only kale that's won anyone over in this house has been kale chips.

  4. I bow to your use of Kale! I have the hardest time using it in recipes that don't completely mask it's taste. I want it to shine sometimes!!! I am totally going to make this.

  5. I am definitely pinning this one!

  6. I love this idea... I may have to add kale to my veggie lasagna next time! :) Thanx for the tip.

  7. Wow that looks impressive. You are amazing with Kale. I still haven't tried it in a recipe yet : )
