Last night I was feeling a little adventurous in the kitchen, and since I am on such a big Kale kick - I created this ultra-yummy recipe. The secret - the Kale (the most nutritious veggie around). My husband has been so sick of me serving him Kale almost every night, and yet he had no clue that it was Kale in the lasagna. How's that for being a sneaky chef?
- 1 pkg. lasagna noodles
- 1/2 cup chopped cherry tomatoes
- 1 bunch of fresh organic kale
- 1 cup mozzarella cheese
- 1/4 cup chopped basil
- dash of olive oil
First line the baking dish with a little olive oil. Then add a splash of red pasta sauce, followed by some hard lasagna noodles.
Then add some fresh (organic - remember Organic is important when purchasing kale) Kale. Add some chopped basil, mozzarella cheese, and some chopped cherry red tomatoes.
Repeat until your dish is full!
Bake at 375 for 25 minutes! Enjoy with some fresh roasted veggies!!
