I shared with everyone yesterday about my mission to get into better shape for the Summer. I made this super healthy recipe for dinner tonight, that was only 150 calories per taco! The tacos were easy, healthy, and delicious!
- 12 corn tortillas
- 1 pound of fresh tilapia
- 1 large avocado
- 1 Tablespoon of fresh cilantro
- 1/3 cup fo chopped mango
- 1 large green onion
- Juice from one lime
- 1 Tablespoon of cumin
- 1/4 teaspoon of paprika
- 1/4 teaspoon of pepper
- 1/4 teaspoon of salt
- 2 Tablespoons of olive oil
First clean your tilapia.
Mix paprika, cumin, salt, and pepper in a small bowl.
Coat the fish with the seasoning and let set while you prepare the salsa.
For the salsa - mix the papaya, green onion, avocado, cilantro, and juice from lime. Mix well.
Heat olive oil in pan, and add fish to the pan. Cook for about 3-5 minutes on each side on high heat.
Add to warmed corn tortilla, top with salsa, and serve. Enjoy!
