Dinner in a Dash: Stuffed Bell Pepper Recipe

I have always wanted to try making stuffed bell peppers for dinner. I wanted to try making a simple recipe that would make a perfect weeknight meal. This dinner was quick and easy - perfect for a quick & healthy weeknight meal for the family. The kids loved the bell peppers just the way I prepared it, but my husband wanted a little more spice - so he added a dash of salsa.


  • 4 large red bell peppers.
  • 1 cup of cooked rice
  • 1 Tablespoon of olive oil
  • 6 Green onions
  • 1 pound of ground beef
  • 1 cup of corn
  • 1 teaspoon of cumin
  • 1 cup of monterey jack cheese
  • salt and pepper

Heat the oven to 375 degrees, and cook the rice according to the package directions. Then add oil to a heated skillet and cook the scallions along with the ground beef until it is no longer pink.

Stir in the corn, cumin, cooked rice, 1/2 cup of cheese, dash of salt and pepper. Cook for about 3-5 minutes.

Cut the bell peppers in half and remove the seeds from the center of the peppers. In a large baking dish add the bell peppers, and the fill with the beef mixture. Top with remaining cheese and more chopped green onions. 

Cook for for 30-40 minutes. Enjoy!
