Slow Cooker Garlic Mashed Potatoes

Guess what? I am doing all of my Thanksgiving dinner in a slow cooker (with the exception of the turkey & stuffing). It is leading up to possibly the easiest Thanksgiving dinner I have ever made! Today I made some awesome garlic mashed potatoes in the Ninja 3-in-1 slow cooker. The recipe is easy - delicious - perfect for Thanksgiving.

Last night I had my husband peel 3 pounds of potatoes for me. Then I diced them in to cubes, and added it to the Ninja with garlic and water.

I let it slow cook over night. When I woke-up the house smelled Divine!

Then I drained the potatoes and garlic in a strainer.

Then added it to a blender with sour cream, butter and cream cheese. I also added a dash of salt and pepper.

I let it blend for about 5-10 minutes. Then added it to a buttered dish. On Thanksgiving, I will just put it back into the slow cooker, and let it warm-up while the turkey is cooking. Top with chives.
